No Bake Cheesecake

This is delicious and decadent for when you fancy a treat, super easy to make too and doesn’t require any baking. Just choose your flavouring, mix the ingredients together, choose your yummy biscuit base, let it set for a few minutes in the fridge and it's done.

A delicious dessert for you to enjoy as a treat.

Quark for Cheesecakes

Most are put off using quark in recipes as it's quite sour tasting and not pleasant to some on it's own. You will see it in a lot of low calorie savoury dishes as a replacement for cream and it's really is not a great substitute for those as it tastes in no way creamy.

However in a cheesecake if you flavour it correctly it can have the same consistency of cream cheese, so is a great alternative for a lower calorie dessert.

Best Granulated Sweetener for Desserts

When it comes to sweetener things I mostly just choose to use some calories on honey, maple syrup or brown sugar.

However sometimes you need to bring the calories down quite a bit and when I feel I can do it without affecting the taste I will opt for some granulated sweetener. There is only one type I will use though and that is Erythritol. It is naturally derived, doesn't have that strong aftertaste and can be used like for like with sugar so it's a great swap occasionally.

Be careful when using other sweeteners as not all are equal, some you will need to use more, some less, so always check the packaging for the sugar to sweetenerr ratio.

Sweet Freedom Choc Shot

Sweet freedom has a great selection of low calories syrups which are 100% natural and add a great flavour to a variety of things from oatmeal, to pancakes etc. They do various flavours of chocolate, as well as some fruit syrup which is a great replacement for golden syrup or honey and them some chocolate spreads also.

For this Chocolate No Bake Cheesecake, I used the Choc Shot Original, but any of the flavours would work.

To make the cheesecakeI use a small springform pan (no bigger than 4cm) it just makes it easier to plate the cheesecake when ready. But if you are happy to just eat it from a dish, you can layer it in a similar size dish.

Mmmmmm now just look at that Oreo Chocolate Crumb base!!!

Chocolate Cheesecake

Yield: SERVES 1

Total Time: 2 hours 15 minutes

Yummy Chocolate No Bake Cheesecake - with an Oreo biscuit base, perfect for any night of the week.

Ingredients

  • 2 Oreo cookies
  • ½ cup (8 tablespoons) of quark
  • 4 teaspoons of Sweet Freedom Choc Shot (or swap for a low calorie chocolate syrup)
  • 1 tablespoon of granulated sweetener (I use erythritol)
  • 1 teaspoon vanilla extract
  • Spray oil

Instructions

  1. Pull apart the Oreos and scrape off the cream filling, set the Oreo biscuits part to the side and add the cream filling to a bowl with the quark, sweetener, vanilla extract and 3 teaspoons of Sweet Freedom Choc Shot
  2. Mix until all combined.
  3. Place the Oreo biscuit part in a ziplock bag and bash until crushed.
  4. Sprinkle this into the bottom of a mini springform pan (no wider than 10cm (or can use a small dish), spray with a little spray oil and then roughly flatten into the base of the pan.
  5. Spoon in the quark mixture, smooth over the top and place in the fridge for at least 2 hours to firm up.
  6. When ready to serve, carefully release from the spring form pan, and using a spatula carefully slide onto a plate. Drizzle over the top with the remaining teaspoons of Choc Shot.
  7. Enjoy!!

    where are you getting the Quark from in Ontario as I have never seen it in any stores

      Hi Gail - Most loblaws stores should carry it. It is by the liberte brand. http://www.liberte.ca/en/products/quark-cheese - If you can't find it in store, try speaking to the store manager to see if they can order you some in. Hope that helps 🙂

    great recipe though how do you make just 2 small oreo biscuits enough for the bottom of a cheesecake? it looks pretty thick for just 4 small oreo rounds

    for other cheesecakes I make I got to out local£1 shop as they sell sugar free digestives they have hardly any sat fat in too I think its 0.2g zero sugar they taste better then big branded digestive biscuits
